Strip Roast with black Tucupi

What we need:

700 gr Bone-in strip roast
100 gr chopped red onion
50 gr minced sweet pepper
10 gr minced fresh garlic

3 gr Aji Charapita Chili Pepper Paste
80 gr Panela (unrefined whole cane sugar)
50 gr black Tucupi
1 liter Beef broth
5 gr Coriander
2 gr Cumin
2 gr Pepper 
5 gr Vegetable oil Salt as to your taste

How to Prepare:
  1. Season the strip roast with Salt, Pepper and Cumin.

  2. In a Saucepan brown the meat and add red onion, the sweet pepper, the garlic and the Charapita Pepper Paste.

  3. Make a Sauce

  4. Add the Panela, the black Tucupi, the Beef Broth and the Cilantro.

  5. Cook at 85 degrees C for 45 Minutes.

  6. Turn off the heat and let it rest for 15 minutes.

  7. Serve hot with fresh herbs.
